Alonso Wineries. ALBARIZA – MAÍNA – PALOMINO – UNDER VEIL – 2015

Viticulture:
Palomino grape at 100% in soil of Albariza de Barajuelas in
vineyard about 25 years old in Pago de Maína, in
Sanlucar de Barrameda. A viticulture of
minimal intervention, leaving the natural development to the maximum
expression. Only few sulfur treatments are carried out and
copper.
Elaboration:
The SUNNY clusters go through the selection table and are
they destem A very gentle pressing is done in a press
horizontal pneumatic system and the must is taken to a steel tank
stainless steel for its alcoholic fermentation with temperature
controlled. Fermentation is spontaneous with yeasts
indigenous. Once finished, the coarse lees are removed and
put in an old boot of 38 arrobas that they previously had
chamomile.
Breeding:
The aging takes place completely in static, no
add no wine at any time. This long aging is
fundamentally biological, under flower veil, although there are
periods in which the wine enjoys a certain oxidation due to the
scarcity of flower veil yeasts. At 6 years and some
months of aging, the wine is bottled without filtering or clarifying or
treat in any way. It is a bottling “EN
BRANCH".
Philosophy:
For Bodegas ALONSO it is very important to produce wines of
minimal intervention and very long parenting to explore what
our soil, climate and breeding are capable of contributing to the
wine world. We seek the maximum expression of the grape
Palomino through our elaborations and aging.
We pursue the faithful representation of our land and landscape
natural through our wines.
The barrel was selected by Andrés Conde, founder of
Unicorn Wines and National Gastronomy Award 2021,
highlighting the existing parallelism with Jura wines and the
great texture and concentration of the wine, adding the great
aging potential.
