Zillinger

Johannes Zillinger and his family have lived according to organic principles for the last 30 years.

Chemicals simply don't play a role when it comes to the environment, nutrition and, in particular, wine. Johannes believes that winemaking begins with healthy soil; and “remarkable and exciting wines” are made without limits.

The last 30 years have been a wonderful learning curve for the family and the experimentation hasn't stopped since.

Zillinger's vineyards are Demeter certified and managed according to biodynamic principles. "I don't force corsets on my wines."

3 different wine styles We are proud to have three different lines of Johannes wines: Reflexion, Revolution and Numen.

The Reflection series represents and reflects the soil, the variety, the location, the orientation and the harvest. These wines are the heart of the Zillinger winery, places where both his father and grandfather belonged. From Grüner Veltliner to Zweigelt, perfectly reflecting the origins of the old vineyards and the winemaker himself.

"Long live the revolution!" This unique series is made up of a white, pink and red hearth. Johannes uses this line to experiment: with solera systems, short-term fermentations, vintage blends, you name it… “Everything allowed, nothing forbidden”, says Zillinger, clearly having fun creating unique natural wines!

The Numen Series We have finally come to the latest and most precious series, Numen. Wines with hardly any intervention in the cellar. The Fumé blanc (Sauvignon blanc, Alternative Wine of the Year 2020 by Gault&Millau), Grüner Veltliner, Riesling, Muskateller and Rosé: specially selected from their oldest vines and the ripest grapes, intracellular fermentation (where fermentation begins inside the grape ) in amphorae and matured without intervention for up to 16 months.

The philosophy here is that these wines have been made according to metaphysical principles that humans simply cannot influence. The grapes have had enough time to develop their full potential.

That's why each vintage is different, so you just have to open each bottle one by one!
