François de Nicolay

François de Nicolay, manager of the Chandon de Briailles family estate in Savigny-Lès-Beaune on the Côte de Beaune, decided in the early 2000s to build a small “winemaker - breeder - bottler” trading house.

"The cultivation in biology and more in biodynamics has been evident to me since the 90s", starting from the simple and logical idea that good wines can only be made with good grapes.

With Maison François de Nicolay, a small commercial structure, I decided to make wines without artifice, without additives, from grapes, from organic or biodynamic cultivation.

The philosophy of Maison François de Nicolay:

The supplies of grapes and musts (grape juice not yet fermented) or wines come from vineyards certified as organic or even biodynamic or in the process of transition to organic farming. If they are of the highest quality, we can try to make pure wines! !

That is, without any added product. Thus, at Maison François de Nicolay you will find vintages made without added sulphites, without chaptalization ... Only grapes! For the other crops, the only addition is an extremely low dose of sulfur. Once acquired, the musts or wines are aged in an old cellar in Savigny-Lès-Beaune, without pumping over, without filtration, without clarification and they are bottled naturally, by hand, with a goat with two spouts, directly from the barrel "a the goat ”without pumping. It is an artisan work that avoids adding sulfur and that maintains the wine with all its original freshness.
